L’Oasis is kwon for his legendary patio, its green surroundings and murmur of water, its veranda and its gleaming kitchen. For its elegance and intimacy too. But in the eighteen years of the helm, Stéphane Raimbaul has above all made his restaurant an intimately protective place where the gastronomy fallows a clear line that has earned his renown and numerous followers. Long before the wok came into fashion and others chefs began to use Thai herbs, Stéphane Raimbault was already innovating, offering his own vision of the Orient, uncovering connections between little-know flavours from distant lands and Mediterranean Grand Cuisine with itself was taking its first hesitant steps in those days. Today the Asian fashion is at its height but Stéphane and his brothers continue to develop their very own Orient-Occident approach. A benchmark recognized and courted far beyond the Côte d’Azur. L’Oasis has earned its stars but it always looking for a new angle on its work. Fine dining on one side, the chef’s initiation workshops on the other, everything here is exploration, taste, transmission. That’s how a great restaurant stays great.
